Want to make authentic Paella at home (UK)? Here's the solution.
Paella broth / stock made by master paella chef Rafa Marcos from PAELLER, in the land where paella was invented (Valencia, Spain). Rafa & the team source fresh produce, from the area (meat, fish, vegetables, olive oil & herbs). All these products are cooked over a wood flame, giving the stock the characteristic smokey taste of traditional Valencian Paella. This product is for 2/3 servings.
Recipes for this product
Start with High Heat:
- Add 30ml of Extra Virgin Olive Oil
- Pour in the Paeller stock and ingredients until it boils and reduce heat to minimum. *Gas mark 2 or 3 of 9
- Add the rice. 270g of D.O. rice for 2/3 servings.
*Chef Secret: Why we use this rice? Because the flavour of the stock will be absorbed much better than other varieties.
- Distribute the rice, and leave at medium-low heat for 15-17 min
- To Finish off, 1 min at full heat, and you're Done!
*You should have a caramelised/fried area of rice underneath, in the centre of the dish, called "Socarrat" this is a highly valued part of the Paella.
